Ingredients

  • 1 cup diced butternut squash
  • 1 cup diced beets
  • 1 cup diced sweet potato
  • 1 cup diced leeks
  • 2 garlic cloves, minced
  • 1 cup quinoa
  • 2 cups cooked white beans
  • 1 can crushed tomatoes
  • 2 tbsp vegetable oil
  • 1 tsp dried oregano and thyme
  • 1 tsp salt
  • 4 cup water

Instructions

  1. On medium heat, in a large pot, add oil and saute leeks for 3 minutes, or until translucent. Add garlic for 1 minute.
  2. Add squash, beets, and sweet potatoes and cook for 7 minutes.
  3. Add remaining ingredients and bring to a boil. Reduce to a simmer.
  4. Simmer for 20 minutes.
